Vegetable Stew

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 carrot, finely chopped
  • 1 medium sweet potato (approx. 200g), peeled and cut into small bite-size pieces
  • 1/2 red pepper, finely diced
  • 100g red lentils
  • 1 tin chopped tomatoes
  • vegetable stock

Instructions

  • Sauté the Vegetables:
    • Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
  • Add the Carrot and Sweet Potato:
    • Stir in the finely chopped carrot and sweet potato pieces. Cook for another 5 minutes, stirring occasionally.
  • Incorporate the Red Pepper:
    • Add the diced red pepper and cook for an additional 2 minutes.
  • Add Lentils and Tomatoes:
    • Stir in the red lentils and the tin of chopped tomatoes.
  • Add Vegetable Stock:
    • Pour in enough vegetable stock to cover the ingredients. Stir well and bring the mixture to a boil.
  • Simmer:
    • Reduce the heat to low and let the stew simmer for about 25-30 minutes, or until the lentils and vegetables are tender. Stir occasionally.
