Ingredients

  • Fresh mushrooms from their vegetable garden
  • Cooked white rice
  • Corn starch or potato starch
  • Salt and pepper
  • Oregano and thyme

Instructions

  • Prepare the Mushrooms:
    • Clean and finely chop the fresh mushrooms. Sauté them in a pan over medium heat until they release their moisture and become soft (about 5-7 minutes). Set aside to cool.
  • Mix the Ingredients:
    • In a large bowl, combine the cooked white rice, sautéed mushrooms, salt, pepper, oregano, and thyme. Mix until well incorporated.
  • Add the Starch:
    • Gradually add corn starch or potato starch to the mixture, stirring until the mixture holds together and can be easily shaped into balls.
  • Form the Meatballs:
    • With clean hands, roll the mixture into small balls, pressing firmly to ensure they hold their shape.
  • Cook the Meatballs:
    • Heat a little oil in a pan over medium heat. Fry the vegetable meatballs until golden brown on all sides, about 3-4 minutes per side.
